If you didn’t see the discreet bakery sign off of Bridge Street, you might assume that the knots of people gathered one recent weekend morning on the wrap-around porch of Dean Menke and Patti Delaney’s Huntington home were just friends and neighbors stopping by to say hello.

Actually, most of them are. But they are especially lured on Saturday mornings by the chance to buy Menke’s outstanding handmade croissants, plain or filled with chocolate or almond paste; seasonal fruit pastries made with rhubarb or currants grown in the family’s garden or from local farms; flaky Hungarian sweet rolls filled with raspberry preserves; and fresh-baked quick breads and bagels. Two years ago, Dean Menke was living in Tonga, a group of islands in the South Pacific, teaching a pastry course at a vocational school and running a pastry business.

Now, he and his wife are living in Huntington, Vt. where he wakes up at the crack of dawn to prepare pastry dough, milk a neighborhood cow once a week, and experiment with different croissants--- all part of his new business, The Backdoor Bakery, which is run out of his home three mornings a week.
